Come Dine with Me

We don't get much in the way of food mentions here so I thought I'd kick off with my dinner for tonight.

'Butternut Squash' stuffed with Minced Beef & Onions

Never tried it? Well you're in for a treat if you do!

Butternut squash is one of those alien looking vegetables that many of us wouldn't give a second glance at, you should... it's delicious!!

Method:

1. Take one Butternut Squash and scrub the outside with fresh water then dry it.

2. Using a sharp knife cut it down the middle, careful.., they're quite hard!!

3. Scoop out the seeds and dispose of them or save them for growing next year.

4. If you own a microwave place one half of the Butternut Squash face down in a microwaveable container so it sits flat on the bottom then put half an inch of water around the edge, cover it with cling film leaving a small air gap for steam to escape and cook it on FULL POWER for around 20 minutes (based on 800 Watt Microwave)

5. Once cooked turn the Squash over and liberally coat with 'Ligth Olive Oil' then sprinkle liberally with fresh ground Black Pepper and Sea Salt.

6. Pop it under a medium grill to caramelize the top

7. While the Squash is under the grill fry-up some Ground Minced Beef and freshly diced Onions

8. Once the Beef & Onions are cooked your Squash should be about ready,

9. Fill the hollowed out end from where you removed the seeds with your Mince & Onions and you're good to go.

10. Serve with seasonal green vegetables of your choice (Spinach works wonders) and apply a liberal coating of Beef Gravy.

The skin of the squash can be eaten also and contains lots of Vitamin C which is great for a healthy immune system!

Enjoy!

Next Saturday I'll post my recipe for 'Chicken Ding' it's so easy even a cookaphobic like you could follow it, oh what the heck here it is now in case you change your mind on the fish & chips.

1. Take chicken and put in microwave

2. When it goes 'ding' chicken is ready

Enjoy!

Hello, give advice! I want to buy such a wonderful machine - a blender, and will it replace an ordinary mixer? Does the cream whip well, just as with a regular mixer, I knead the muffin and biscuit dough. Or is it not interchangeable kitchen assistants? According to reviews on the Internet, a blender from ianboer (find here) was very interested. Has anyone bought at this store? What did you think of it?
